The Taste of the West is:
Rounded, malty, and has a rich honeyed flavor from the locally grown barley. It has a complexity that develops as you drink, because of the Saison yeast, and low and slow fermentation approach.
There is a sweetness and a touch of vanilla, like bourbon, from the American oak. And a gentle intricacy of flavors from the ability to age for longer in the wet, humid climate of the PNW.
The flavor works well with others, giving bartenders the opportunity to be creative when designing cocktails

What is in Westland Single Malt?

In contrast to most distiller’s yeast, our Belgian Brewer’s yeast is a noticeable and enjoyable departure that brings an array of fruity ester notes to the final whiskey.

We wouldn’t consider our flagship single malt a “peated whiskey” per se, but incorporating a small amount is a creative way to extend the finish.

Our signature mash bill featuring kilned and roasted malts showcases the wide spectrum of flavors that malted barley can bring to whiskey.

Our use of virgin oak is typical of American whiskey making but practically unheard of in the Old World and leaves an undeniable mark on the final flavor.

While certainly not the defining characteristics of our flagship expression, a touch of rich sherry-matured whiskey helps to create a round and luscious mouthfeel.
